Today over on the Older Bolder Life I’ve posted this nifty recipe for a Hasselback Chicken with Feta, Red Peppers, and Olives. I know, I know – we’d all rather be grilling even in January, but now and again roasting some plump, juicy chicken breasts in the oven suits the weather much better.
This one is quick, damned easy, and great with a simple marinara sauce, tzatziki, or even a spicy guacamole on the side, and we’ll have a Tex Mex version (from Chef Libby in Austin) coming soon.
