Today over on the Older Bolder Life I’ve posted a fairly simple (hey, it’s more or less a ‘peasant food’ breakfast) version of huevos rancheros using the amazing New Mexico style green chile sauce from last week.
There are a thousand different ways to make this dish, and I’m sure your grandmother’s was better, or perhaps your childhood Tex Mex place downtown wherever you grew up, though when we’re cooking on the river or exploring a new breakfast dive in Santa Fe or Taos, this is the classic prep we tend to measure them all by.
