A couple of weeks ago I was (pretty gently) taken to task here on Chi Wulff for daring to post a green chile sauce recipe while living in Texas and talking to an assembled bunch of foodies and food professionals, most of whom also live in the Lone Star state.
For those who are interested in the finer points of foodie pedantia, go back and read this post about the Roasted Green Chile (Enchilada) Sauce I posted over on the Older Bolder Life in which I clearly explained the Tex-Mex slant on the recipe, which included poblanos and tomatillos.
Today I’ve posted a genuine New Mexico-styled green sauce recipe – we’re calling it the Damned Authentic New Mexico Green Chile Sauce; the recipe was given to me by the wife of a residency mate several decades ago in Salt Lake City, a wonderful women who mastered cooking at her grandmother’s (and mother’s) side growing up in Santa Fe.
My two other current chef buddies from New Mexico validate that this one is the real deal, New Mexico style green.
