Today over on the Older Bolder Life I’ve posted this nifty recipe for a Green Chile Chicken Enchilada Bake that’ll serve a crowd, featuring the kick ass Roasted Green Chile Sauce (or salsa) from last week.
Several weeks ago I helped a buddy work this one out as he prepared to feed a family crowd for the 4th and their matriarch’s 94th birthday; sounds like a great (and safe time) was had by all. While a red chile basted rib was the star of the day, he pre-gamed with this enchilada bake and a salad to rave reviews.
