Just in time for your holiday menu planning, today over on the Older Bolder Life I’ve posted a revamped recipe for what we’ve always found to be the best damned potato salad on the planet – Clay’s Potato Salad. We first captured the recipe from grad school friends in San Antonio over three decades ago, and have tweaked and twisted this one now and again along the way. This really is the best damn potato salad on the planet, boosted to that lofty position by the inclusion of bacon and lots of other goodies.
This is a perfect 4th of July side to accompany the masterfully grilled or smoked proteins you’ll be cooking up in a week; make it a day ahead to let the flavors reach their peak on day two.
