Today over on the Older Bolder Life I’ve posted this nifty recipe for an Asian-Inspired Zucchini Jalapeño Salad given the explosion of fresh zucchini around our neck of the woods these days; yep, it’s full on summer in North Texas now, hot as hell and for the most part dry as a bone.
One of the great things about the hot summer season is that our market farmer compadres are bringing loads of great looking fresh produce to market every week that’s ripened to perfection under that bright sun, and this is a great way to use up some of that perfectly-ripened young zucchini sitting right now on your counter or cooling in the fridge.
Oh, and if you made some last week – that chile crisp adds a nifty finish to this one.
