Chatting up a new friend at work this past week the subject of how to creatively incorporate leftover turkey into the weekend’s menu beyond the inevitable sandwich came up, sparking what seemed to be at the time a much more spirited debate than expected.
Around our camp it simply wouldn’t be Thanksgiving without a pot of Bib’s Roasted Turkey Bone Gumbo simmering way on the stove; that recipe has perhaps been our most viewed post-Thanksgiving recipe ever on Chi Wulff over the past decade and change, and I can never walk by a pair of Carhartt insulated overalls in a feed store without thinking of Bib (read the story at the link) and his gumbo parties.
Given our recent foray to Santa Fe and our (over) indulging in New Mexico’s amazing green chile, we’re having Creamy Green Chile Turkey Enchiladas tonight.
