We’ve been playing around with curries and curry powder of late around our camp now that fall weather has finally arrived in our neck of the woods.
Today over on the Older Bolder Life I’ve posted this recipe for a nifty Spicy Coconut Yogurt Chicken Stew, a spicier riff on a Somali-inspired chicken stew in part sourced from our fly fishing chef buddy Libby down in Austin.
Hearty, damned simple to make despite the (somewhat) long ingredient list, and amazingly tasty with mushrooms or shrimp in lieu of the chicken, this one will stick to your ribs, provide some interest at dinner, and makes a big enough pot to serve a crowd or enjoy over a couple of meals this week. Damn, this one’s really good.
