Friday Feast 23 August: Spicy Grilled Bacon (or Pork Belly) Skewers

Today over on the Older Bolder Life I’ve posted these damned tasty, and surprisingly simple, Spicy Grilled Bacon (or Pork Belly) Skewers after working out a few kinks in the recipe.

A friend from Montana sampled these at an outdoor expo in Boise a few months back, and after nearly setting his back deck on fire twice pestered me for some help in dialing in the cook here.

The key as you might imagine is building a slow and even two-zoned live fire, or just firing one burner on the gas grill, and going at this one slowly over indirect heat to begin to brown up the bacon. Building up a lacquered glaze at the end is a piece of cake, and you’ll be amazed what an interesting and delicious flavor the caramelized glaze adds to the final product.

These would make the BLT of your dreams, though we keep eating them like corn on the cob off the skewers accompanied by a great guacamole and salad every time I whip up a batch.
