From the why the hell didn’t we start cooking this one years ago file – how about a Spicy Thai-Inspired Basil Shrimp Stir-Fry for your first August weekend.
This one is a piece of cake to pull together; you puree peppers, garlic, avocado oil, fish sauce, lemongrass (use the prepared puree), salt, and a bit of sugar together, marinate the shrimp for up to an hour, then stir fry for mere minutes. Wilt in a couple of handfuls of fresh basil, and you’re ready to rumble.
In the bottom pic we served this one up with a recipe of Ginger Pecan Cauliflower Rice, though this Chile Peanut Cauliflower (or regular) rice would play damned well too.
