Here’s another great recipe for your summer dining pleasure, a nifty Spicy Hanger Steak Lettuce Wrap or Taco posted today over on the Older Bolder Life.
Being Texicans by birth, and having wandered the Southwest and West for most of adult lives, my family has devoured their fair share (probably more than their fair share) of great tacos over the years. Being back in Texas now for a spell means we’re back smack-dab in the center of fajita and carne asada country, and we’d defend to the death the place that a well-cooked skirt steak has in culinary history.
A kissing cousin to the veritable skirt steak is the hanger steak, also cut from a steer’s diaphragm, but the more tender inner section, as opposed to the more toothy outer section – the skirt. The hanger is worth seeking out, ask your butcher or meat-cutter for it and give it a spin here – it’s damned tasty.
