Better late than never today, it’s been a crazy few days around our camp.
Here’s a nifty one to sneak into your rotation for this upcoming week – a Crunchy Oven Roasted Nashville “Picken” (Crushed Pork Rind Crusted Chicken). Longtime friends and readers know we love full-flavored, spicy food, and are yuuuge fans of the classic Nashville chicken, though we’ve long ago steered clear of the oils most commercially-prepared fried chicken is cooked in.
This oven-roasted version is just as crunchy and tasty as the deep fried version, and the optional Nashville glaze (or sauce, or drizzle) is stunningly good.
