Here’s a simple Holiday Sangria from friend of Chi Wulff Red in Denver; he writes –

…try this holiday sangria, my wife picked it up somewhere a couple of years ago and we keep coming back to it when we need something that looks spiffy to serve to friends, but won’t knock everybody on their ass as the night goes on. Another nice thing about this one is you don’t have to buy the top shelf Pinot to make it work.

We usually don’t add the sugar as the Pinot and the apples usually get it sweet enough, let it soak for an hour and taste before adding…

Merry Christmas Red, and may Santa and his elves be very good to your crew this year.

4 Granny Smith apples, cored and chopped
4 Pink Lady or Honey-crisp apples, cored and chopped
4 cups (maybe a few more) fresh cranberries
2 cups cran-apple juice
2 cups chilled club soda
2 Bottles of your favorite Pinot Grigio
Optional: 1/4 cup granulated sugar

Garnish: Fresh sage leaves

Combine the first six ingredients in a large pitcher and stir to combine. If you’re thinking you want it a little sweeter, let it rest in the fridge for an hour and taste it, the apples may provide enough sweetness to suit you – if not, stir in the sugar (make sure it dissolves).

Let it rest at least another hour (two-ish total) before serving, garnish with the sage sprig in each glass.

Enjoy.
