The good folks at Zatarain’s have sent us another box of goodies to give away, and just in time for Thanksgiving, this round we’re featuring a couple of their Cajun Injector injectable marinades – the Creole Butter and Creole Garlic versions.
Injectable marinades have been around for a while now, and count us among those tickled pink to see venerable, always tasty Zatarain’s offer up their own Cajun-inspired marinade versions. I’m doing a pork shoulder (destined for po’boys) using their Roasted Garlic marinade this week in fact…
We’ll throw a few other sought-after Zatarain’s products in this box – a package of their Jambalaya Rice Mix, a box of Crayfish, Shrimp, and Crab Boil (an essential if there ever was one), and a box of their NOLA-style, Crispy Cajun Fish Fri mix.
Waxing nostalgic about Zatarain’s (from the last Z’s giveaway) –
I’ll never forget the first time I drove into New Orleans on I-10; it was a cool, cloudy day in early spring, and not too busy around town. I was en route from Austin to Augusta, Georgia on a little business project, and needed to get on down the road (dammit) before stopping for the day.
The wind was just right so that the road routed through the red beans and rice scented air being vented from the Zatarain’s facility that day, and mingled with the heady odors of the bayou, it made me want to stop right then and there and eat my weight in Cajun delights, take a nap, and then do it again the next morning.
My first memories of Zatarain’s goodness are rooted back in childhood, down at my Grandfather’s beach house on the Texas coast, where Ma-Ma would dig out the little bag of Shrimp and Crab boil from the brightly colored box and use it to season up that evening’s crab and shrimp we’d soon be picking through on the red-checkered tablecloth-covered picnic table sitting out on the porch.
