Another very interesting grapefruit-based offering today from compadre EH down in far South Texas – The Rosy Boa.
He writes –
…with the heart of grapefruit season right around the corner, here’s another one you guys need to try. At first glance this one might seem like an odd combination, with the grapefruit, lime, and pomegranate juice, along with the tequila and ginger beer, but it just works.
It’s not essential, but when we first had these with friends last week, the salt, paprika, and chipotle rim dust was perfect….
Dang it, might be time to pick up some of those early grapefruit coming in already…
2 cups fresh grapefruit juice
1 and 1/2 cups tequila
1/2 cups pomegranate juice
1/3 cup fresh lime juice
1/4 tsp rose water
1 and 1/2 cups ginger beer (maybe more)Garnish: Grapefruit wedges
To rim glasses
1 tbsp kosher salt
2 tsp sweet paprika
1 tsp chipotle chile powder
If rimming your glasses, wet half the rim of 8 (rocks) glasses, dip in the chile/paprika/salt mixture and set aside.
Mix the grapefruit juice, tequila, pomegranate juice, lime juice and rose water in an 8 cup measuring glass, add 1 cup of ice and stir until fully dissolved and the mixture is really cold.
Now stir in the ginger beer, carefully fill the prepped glasses with ice and fill, then garnish with a grapefruit wedge. Optionally, top with more ginger beer. (Note – don’t add the ginger beer until you’re ready to serve this one.)
