From our compadre EH in South Texas comes another grapefruit-based recipe that is guaranteed to improve your life this weekend – his Honey Grapefruit Marinade.
He notes that it’s quick and easy to stir together, and while it was probably concocted with pork or poultry in mind (he says this marinade, brushed and glazed to perfection on a thick-cut, bone-in pork chop is outrageously delicious), he and his lovely wife have been using it on all manners of seafood, including grilled shrimp and redfish.
Not wanting to miss out on the fun, even if a tad bit early for the great Ruby Red grapefruits out of the Rio Grand Valley, I grabbed a turkey breast the other day and had the butcher slice it into “turkey steaks” about an inch thick (just have them make cuts perpendicular to the long axis of the breast), which we then marinaded for several hours and grilled.
You simply wouldn’t believe how good it was. Hot damn.
1/2 cup grapefruit juice
1/2 cup honey
1/4 cup (scant) good olive oil
2 tbsp fresh zested grapefruit peel
2 tsp mild ground red pepper
1 tsp cayenne
Combine everything in a bowl and stir well; best used within several hours.
