Thirsty Thursday 28 September 2017: The Tequila Sour

Saw one of these served while out with the lovely wife this past week enjoying a healthy-ish Tex Mex salad at one of our favorite eateries, prompting a quick chat with a very satisfied customer at the neighboring table and later with the bartender.

Refining a classic still occasionally wins the day.

‘Nuff said.

1.5 ounces good reposado tequila
0.75 ounce fresh lemon juice
0.75 ounce (light) agave nectar
0.25 ounce fresh lime juice
1 egg white

Garnish: Bittermens Xocolatl mole (or Angostura) bitters

Pour the first 5 ingredients into your trusty shaker, without ice, and shake, shake, shake for about 15 seconds.

Now add ice, shake it up again, and strain into a (rocks) glass; garnish with 3 drops of your bitters of choice.
