Another winner from compadre EH down in the Rio Grande Valley (one of the few coastal regions in Texas to escape critical damage in the past weeks) – the Mezcal Paloma.
EH is a self-admitted connoisseur of citrus-based cocktails, particularly grapefruit, and given his damned close proximity to Mexico, he and his lovely wife have an impressive command of the world of tequila and mezcal as well.
He sent this one up last week and noted the original called for club soda, though they’ve been using some of the grapefruit-flavored La Croix as well and insist this one is a keeper.

1/4 cup fresh grapefruit juice
1 tbsp fresh lime juice
1 tsp sugar
1/4 cup mezcal (or tequila)
1/4 cup club sodaGarnish: Coarse salt, grapefruit wedge
Rim your 8-ounce glass with the coarse salt if desired.
Now combine the grapefruit juice, lime juice, and sugar in the glass; stir to dissolve the sugar.
Stir in the mezcal, fill the glass with ice, and top with the club soda.
Garnish with the grapefruit wedge and go it.
