New friend of Chi Wulff Mike B. of Denver appears to have just returned from business on Barbados (I can’t be the only one who might be interested in whatever line of work that is) and suggested we post this simple but “powerfully tasty” Barbados Rum Punch cocktail.

As we chatted a bit, it appears the Barbados fly fishing lived up to its well-earned reputation – difficult with some damned big bones being caught in the near ever-rustling wind, though we continue to hear great things about what a fun, relaxed, welcoming place Barbados is to visit.

As a quick run to the West Indies / Lesser Antilles is out of the question during the next few months, I’ll bet we’re not the only ones willing to give this punch a try. It goes without saying the fresh lime juice is essential, and Mike insists the freshly grated nutmeg makes it.

Cheers.

1 ounce fresh lime juice
1 ounce rich simply syrup (2 pts sugar, 1 pt water)
2 ounces aged Barbados rum
1 dash Angostura bitters

Garnish: Freshly grated nutmeg and lime wheel

Dump everything into your trusty ice-filled shaker and shake, shake, shake.

Strain into an ice-filled (Collins) glass; garnish, and go to it.

Enjoy.
