Long time friend SS from Salt Lake City sent this Rosemary Paloma in a few weeks ago; he’s a friend from way back and due to reasons related to his locale he always asks that I not identify him by anything other than his initials when the discussion swerves to include any sort of adult beverage.
Like us, he’s long appreciated good tequila cocktails and insists this spin on the classic Paloma is well worth the effort to heat up and strain a rosemary simple syrup.
I must admit we haven’t made this one yet, but he’s never been wrong on anything related to fly fishing or food and beverages in over 30 years. And he does agree that you really must find the Mexican Jarritos brand of grapefruit soda to really make this one work…
1.5 ounces good reposado tequila
3/4 ounce rosemary simple syrup
1/2 ounce fresh-squeezed lime juice
4 ounces grapefruit sodaRosemary Simple Syrup
2 tbsp fresh rosemary leaves
1/2 cup water
1 cup sugarGarnish: Fresh rosemary sprig
Into the trusty shaker go the tequila, rosemary simple syrup, fresh lime juice; then fill it with ice and shake, shake, shake.
Strain into a (collins) glass, fill with ice, then top with the grapefruit soda.
Garnish and go to it.
Enjoy.
