Just in time for your Labor Day weekend get together comes this Pineapple Gin Slush from new friend Rick in Lander.
My inlaws live most of the year on the banks of the Missouri between Craig and Cascade (I know, I’m a lucky bastard, they’re even nice people) and we spend a fair amount of time there; he’s a part-time guide and loves being on the water just about every day.
The last few years we’ve been hosting several friends from home up at their place on Labor Day and it’s been summer warm more often than not.
Last year one of the couples we invited showed up with a dozen fresh pineapples (she runs a food coop) and half dozen different gins. Their Pineapple Gin Slush was the hit of the holiday weekend when we weren’t on the river.
Since you guys will most likely be grilling something try some of these on for size and see what you think…
Well hot damn, it’s still summer here this week, time to get that pineapple in the freezer…
3 cups pineapple chunks, frozen
6 ounces gin
2 ounces simple syrup
1 ounce pineapple juice
1 ounce fresh squeezed lime juiceGarnish: Mint sprigs, pineapple wedges
Puree the frozen pineapple chunks, gin, simple syrup, and both fruit juices along with 2 cups of ice in a large blender until smooth. Rick says this will be quite thick, though will loosen when poured.
Pour into glasses and garnish away.
