My wife is a senior accountant for one of the big evil agribusinesses with regional offices in the area; she ends up traveling a fair amount and brought this one home a few months ago.
As the weather has warmed up we’ve enjoyed it more and more; the original recipe she brought back specified gin – the botanicals in gin (juniper, right?) do something to make the mint come to life somehow, though we like it just as much with a good vodka too.
Makes it worth keeping a bag of lemons around and simple syrup in the fridge. I’ve tried premixing and taking in the boat for the day, but the mint looses its pop if you prepare ahead…

8 fresh mint leaves, slapped
3 ounces vodka or dry gin
1 and 1/2 ounces fresh squeezed lemon juice
3/4 ounce simple syrup
Chilled club sodaGarnish: Lemon peel
Slap your mint, then combine with the vodka or gin, lemon juice and simple syrup in a glass (highball for those so equipped).
Fill the glass with ice, then top off with the chilled club soda.
Garnish with a lemon peel.
Enjoy.
