From the “damn we should have served these for Cinco de Mayo file” comes this Mojito del Sol (By the Pitcher) from Al “just south of Miami”.
“…I meant to send this to you guys before Cinco de Mayo as it’s become our standard pitcher to share with friends as we salute the bravery of our friends South of the Border in overthrowing the occupying French.
This sounds like too much mint, but you strain the leaves out after a thorough muddle, which probably the real key to success here. It’s prettier with white rum and don’t leave out the bitters, they’re essential.
The recipe easily doubles though you’ll need a damned big pitcher…”

28-30 small fresh mint sprigs
3/4 cup sugar
1 cup fresh lime juice, chilled
1 and 1/2 cups white or golden rum, chilled
16 dashes Angostura bitters, chilled
4 cups club soda, chilledGarnish: 8 fresh mint sprigs
Muddle the mint and sugar in a large bowl until the mint is broken up and the sugar is green tinted.
Stir in the lime juice, rum and bitters; stir well until sugar dissolves.
Strain through a fine mesh strainer into a showy glass pitcher.
Pour into 8 mojito or iced tea glasses that are filled (half way) with crushed ice and top with a cup of chilled club soda.
Serve with a smile and mint sprig garnish.
