Thirsty Thursday 17 December: Rio Star Grapefruit Rum Spritzer

Hot from the ‘dammit, I told you so file’ comes today’s adult beverage recipe, courtesy of long time friend EH of Harlingen and South Padre Island.

We met EH when selling a property down in far South Texas now over a decade ago; he’s since become an active fly fisher and likes to tease us occasionally about the nice fish he’s catching on the local year-round flats, particularly during the long, cold, Northern Rockies winters.

EH also reminds us every season when the Texas citrus starts to come in…

…the early Rio Stars (grapefruit) have been outstanding this year. My wife and I made the first of these last week out on the island on a 70-something degree afternoon. Better get down here and get some before the ‘winter’ gets here.

And seeing how you guys seem to favor cocktails with ginger beer and rum now and again, here’s one of our favorites featuring the season’s best grapefruit around, the Rio Star Grapefruit Rum Spritzer.

Alright, we’re in. A round of these for everybody today…

2 cups fresh pink grapefruit juice
1 cup ginger beer
3/4 cup light rum
Garnish: Pink grapefruit wheel and candied ginger slices

Combine the grapefruit juice, ginger beer and rum in a pitcher; stir well to combine.

Pour over ice in salt rimmed glasses (use a grapefruit wedge) and garnish with the candied ginger.

Enjoy.
