Dang it, we love it when good ideas keep rolling in to share with the Chi Wulff tribe.

Try this recipe for Guide Boat Ginger Mojitos from Captain GM working out of New Orleans –

I had a client bring a mess of these with him a few years ago and I wouldn’t let him off the boat until he gave me the recipe. I don’t make these for every client but when my wife are out for the day or I’m out with friends, these are usally (sic) on the boat. They’re great for a party too so your (sic) not mixing drinks all the time…

‘Nuff said.

For the Base
1 cup water
1 cup granulated sugar
1/3 cup (packed) freshly peeled and grated ginger
2 cups (packed) fresh mint leaves
1 bottle white rum
1 and 1/2 cups freshly squeezed lime juice

On the Water
Ice
Chilled club soda
Fresh mint sprigs

Make the base. Combine the water, sugar and ginger in a medium saucepan, bring to a boil, stirring to quickly dissolve the sugar. Remove from the heat, stir in the mint leaves, cover and let cool, steeping for at least an hour.

Strain into 2 quart container (discard the solids) and then stir in the lime juice and rum. Cover and refrigerate overnight.

On the water. Fill a plastic cup with ice, fill it 1/2 to 2/3’s with the base, top with chilled club soda and stir. Drop in a mint sprig and go to it.

Enjoy.
