Chi Wulff’s Thirsty Thursday 19 February: The Ramos Gin Fizz

In respectful honor of all those who have been in New Orleans this week celebrating Mardi Gras – and chasing big redfish – here’s one of NOLA’s own gifts to those who have perhaps overindulged the evening before.

Our barfly bartender compadres say this one has to be shaken – hard – for a minimum of two minutes to get it right.

We’ll even use Tanqueray Gin, on good authority the official gin of the Bozeman Angler.

1 1/2 ounces gin
1 ounce simple syrup
1/2 ounce lemon juice, fresh-squeezed of course
1/2 ounce lime juice, fresh-squeezed of course
1 egg white
1 ounce heavy cream
3 drops orange flower water

1 ounce chilled club soda

Combine everything but the soda water in a shaker and give a hard shake to combine.

Now add ice cubes and shake like crazy for at least two minutes; set a timer to be sure.

Strain, top with the club soda, stir and serve.
