August is the dog days of summer. It’s hot. It’s muggy. If you’re in the service industry in a tourist town by this point in the summer you are pretty much tired of the whole human race. How do you beat the dog day blues? Icy cold frozen gin drinks are a good start.
I have a growing appreciation for gin. Having never tried it before a couple months ago, it has definitely grown on me. It probably helps that it is the drink of choice down at the shop. I also am a fan of pineapple, always have been. Combine the two, freeze it and serve it in a tall glass and it sounds like a winning combination.
Here’s what you need:
3 cups pineapple pieces, frozen
6 oz. gin
2 oz. simple syrup
1 oz. fresh lime juice
1 oz. pineapple juice
2 cups ice
Mint sprigs (optional)
Here’s what you do:
Get a fresh pineapple. None of that canned stuff. Fresh. Cut it up and freeze the pieces. Keep the juice. You can cut a couple wedges and reserve those for a garnish if you would like. Once the pineapple chunks are frozen, dump them into a blender with the rest of the ingredients and blend until smooth. Be sure to use fresh ingredients. It makes all the difference in the world. The mixture will be quite thick, but it will loosen up once you pour it. Garnish with mint and pineapple wedges, serve on a hot, muggy day and watch as the world gets a little better.
