Several of our crew work full or part-time in retail and that makes for a sobering day-after-Thanksgiving reality. To a person everybody said ‘I ain’t cooking today’ on the way out the door.
After puttin’ on the dog with a big feast yesterday (huzzah for the Apple-Ginger Brined Turkey) there’s not a great deal of interest today in spending a lot of time in the kitchen prepping another culinary masterpiece.
Sure, today will find us along with thousands of other fishers enjoying thick turkey sandwiches (try one today with crisp bacon and a pile of spicy bread and butter pickles), though there are a few other reasonably creative and easy things to do with leftover turkey.
Here’s our short list for the upcoming weekend (with most of these recipes substituting your pile of turkey for chicken)…
Bib’s Turkey Bone Gumbo. One of our best foodie | recipe stories and a damned good traditional post-Thanksgiving gumbo. You better have saved those turkey bones or made your stock last night.
The Last Pozole Recipe You’ll Ever Need. This is our go-to for New Year’s Eve though it’d be great if you’re due a chilly weekend.
Not Yo Mamma’s Creamy Green Turkey Enchiladas. Our Thanksgiving leftover post two years ago and the second most requested by our clan this year. Bland Thanksgiving leftovers this isn’t.
Best Damn Chicken Salad on the Planet. It still is and works wonders with turkey. Pass the Cholula.
Rainy Day Chicken and Sausage Gumbo. Roux rules, and this is a great standby gumbo recipe for the weekend ahead.
