She Who Must Be Obeyed and I have just now finished wrapping 5 dozen brisket tamales.
The brisket came off the smoker yesterday evening, was chopped fine and slathered in sauce to soak overnight. If you’re doing a batch of these at home, make the masa per the recipe from last Friday – just substitute a cup of your favorite BBQ sauce for every cup of red chili puree the recipe calls for. (We use a home brewed BBQ sauce that’s a mix of all the things we like in a sauce – rich, a little sweet, a little spicy and deeply flavored.)
A batch goes in the steamer tonight around 5…….you bring the beer.
