Chi Wulff’s Thirsty Thursday 23 April: Dark and Stormy

Another emailed champion of an adult beverage recipe, this one from RK in Key West.

As you guys explore Southern cocktails you need to include the Dark and Stormy on your list.

I’m no cocktail historian but this originated in Bermuda and is traditionally made with Gosling’s Black Seal rum (aka the dark), Gosling’s being a staple there since the first Gosling landed in 1806 (or somewhere close to that). The ginger beer (aka the stormy) should be Barritt’s by tradition, though we typically end up using Stewarts or the Natural Brew from Whole Foods for a strong ginger punch; Reed’s doesn’t have enough ummmph to get it done.

There are two other keys to mind here. One is the ratio of dark rum to ginger beer – the genius bartender I trained with said 2 ounces rum to 3 ounces ginger beer is the gold standard – though he also said you need to fiddle with this one pending what ingredients you settle on at home.

The other key is that the original drink doesn’t have lime juice, though you’ll have it served that way most often in Southern bars. Try it both ways, though it’s better with just the lime slice adding a hint of citrus.

We’re in – now to find some genuine ginger beer.

Two fingers dark rum (Gosling’s Black by tradition)
Ginger Beer (Barritt’s by tradition)
Crushed ice
Lime slices for garnish

Make it. In a highball glass (tall) filled 2/3 full of crushed ice, pour two fingers of dark rum and top off with ginger beer. Top with a slice of lime and go to it.
