Chi Wulff’s Thirsty Thursday 8 May: Lucy’s Bee Sting

Lucy’s Fried Chicken is one of those Central Texas icons that carved its sterling reputation the old fashioned way – they cooked their way to fried chicken (and other tasty stuff) heaven one crispy piece at a time on South Congress in Austin (and in Burnett too).

Along with fried chicken, an armada of other comfort foods and gallons upon gallons of sweet tea, they’ve served their (in)famous Bee Sting for years. There are several variations of this one running around out there, though this is Lucy’s very simple, and very good, original (so they say).

Maybe it’s our Texas roots showing (pardon me, ma’am), but we remain pretty danged steadfastly partial to summer cocktails based on a good tequila.

Just like that piece of just-like-your-grandmother’s fried chicken, you’ll have one heck of a time having just one of these.

1 1/2 ounce reposado tequila
3/4 ounce honey syrup
3/4 ounce fresh lemon juice
2 fresh jalapeno wheels (1/2 inch thick)
Lemon twist

Muddle one jalapeno wheel gently in the shaker.

Add the tequila, honey syrup and lemon juice. Add ice to fill the shaker and shake for 20 seconds.

Strain into chilled glass, garnish with a lemon twist and another jalapeno slice.

Enjoy.
