I had partner years ago who believed in reincarnation.
She was a slightly built redhead named Jane who was convinced that in a prior life she had been a Tibetan wise-man, or would it be wise-woman? She liked to pause in conversations and say something tangential that she must of thought seemed enlightened. She reminded us often that her intellectual burden caused her to work slowly and thoughtfully.
Funny, we all came to believe she was lazy and that her intellectual elevator didn’t make it to the top floor. (Which eventually turned out to be the case.) We were certain that she’d come back as a sloth in her next life.
I don’t believe in reincarnation, though if I did I’d probably come back in some future life as a chicken.
That’s not a reflection of my intellectual capacity or courageousness (at least on most days), but of my deep respect for good chicken, particularly when it’s been flavored well and grilled.
We have more good chicken recipes around camp Chi Wulff than tourists headed to Yellowstone this year.
Here’s one of our favorites – Honey Chicken – and it’ll be on the grill tonight.
What’s not to like? Chicken breasts marinated in honey (lots of honey, though the other spices keep it from being cloying), two types of chile, Chinese beer and soy sauce (among a few other things).
Another guaranteed grilled masterpiece for your collection from your friends at Chi Wulff.
6 chicken breasts (skinless and boneless in our nod to healthier eating)
2 tbs fresh garlic, minced
2/3 cup green onions (green and white), chopped fine
2 tbs chile pequin
2 tbs mild chile powder
1 bottle Chinese beer
1 cup honey
1/2 cup olive oil
1/2 cup soy sauce
1 tsp kosher salt
1 tsp fresh ground black pepper
Mix the marinade. There’s not a lot of finesse required here. Mix all the ingredients together in a large bowl, stirring until the honey has more or less dissolved. Pour over the chicken pieces making sure both sides are coated and marinate for 24 hours, turning the chicken a time or two.
Grill. Grill over medium high for 5 to 6 minutes a side per your routine. Couldn’t be easier.
The friend who first fed us this recipe served it with an outrageously good roasted tomato relish.
